Here’s an exciting way to elevate a simple pasta dish: stain it with beets! It’s simple and healthy, and you get some roasted beets out of it to use for later. You can apply this savory method to cous cous, rice, and even boiled eggs. It’s a good trick to get your kids to eat what you want them to.
INGREDIENTS:
Whole red beets
olive oil
salt/pepper to taste
onions
garlic
hard herbs
PROCESS:
Preheat oven to 425 F
Clean and scrub several whole beets
Toss them with enough olive oil to coat their skins, salt and pepper.
Place them in a roasting pan and cover them half way in water.
Optional to add garlic and roughly chopped onions and hard herbs like thyme or rosemary
Cover with foil and roast in a preheated oven until beets are soft, about 45 minutes, Carefully remove from oven and let cool.
Once cool, strain the beets and set aside beets for another use
Pour liquid into a sauce pan and gently simmer to reduce by half. Cool
Once cool use this liquid as your dye to gently toss with cooked pasta, grains, boiled eggs, etc.
