Got an overripe avocado that is looking funky? Swirl it up into a versatile and healthy vinaigrette to use on salads, of course, but also as a dressing for tossing with whole grains like faro or rice. The avocado makes this dressing creamy so it’s also great on fish or chicken. Give it a try:
AVOCADO VINAIGRETTE:
2 oz white balsamic or white wine vinegar
1/2 ripe avocado
2 oz water
2 oz fresh squeezed lemon juice
2 oz extra virgin olive oil
soft herbs, chopped (optional)
** Mix all ingredients in a blender until smooth. Yum!
