Have you heard about the avocado labor strike in Mexico? It’s all over the news. Each one of our vendors has said they can’t get them in, and our small farmers here in California do not have them growing at the now due to the record heat and drought this year. So…. what to do about Los Angeles’ lust for guacamole, taco buffets, and avocado toast?
We turn to Coastal Farm pumpkins! Sounds so weird, right? Well I thought so, and then I tasted it and went whoooaaaa! I didn’t miss the green stuff, I swear! Here’s the secret: get in the best, most concentrated pumpkins that have “aged” off the vine to develop their sugars, then peel, cube and toss with olive oil for roasting and a good caramelization. After that, puree it real smooth and blend in all the fixings you would for traditional guac like jalapeños, lime, cilantro, and Mira! Es deliciouso!
It’s so dang good that we are decidedly keeping it on the menu even when this avocado crisis is over. And we hope it’s over soon!
