Gift Alert! (Order Here) This year, our Chef Matt reworked our tomato and burrata Lasagna Cupcakes™ by replacing heirloom tomato slices with whole cherry tomatoes. This change renders a much more rich tomato flavor as the tomatoes are weaved into the fresh pasta and cheese to provide a sweet burst of flavor in every bite. Plus, the look is so much prettier. It’s the difference between a rustic wood mantle in a cabin and an art deco tiled fireplace. Both are great, but I’m feeling more art deco these days.
The thing is, cherry tomatoes are in season only from about May to November. Also, our Produce Sourcing Manager is seeking out the most firm and punchy tomatoes that are not too big, so this year we started with tomatoes from Tamai Family Farms, then switched for most of the season into Munak Ranch with some JF Organics filling in as well.
For our next batch, we’re going to try and romance Windrose Farms into supplying us with about 10 cases of theirs because, at the moment, they have the best flavor and mouth feel. Ah, but they only grow so much and may not be able to supply us with that quantity, gah! We’re working on it, stay tuned. They make the best gifts because they can just be popped into the freezer and heated up later. I always have them on hand.
