RECIPE:
12 Squash Blossoms
1 Recipe Stuffing
1 Recipe Tempura Batter
VEGETARIAN STUFFING:
1 cup burrata
1 cup ricotta
1 cup bechamel
1 T chopped chives
1 T chopped basil
juice + zest from one lemon
salt + pepper
gently mix all ingredients together
MEAT STUFFING:
Cook down some leftover braised meat (such as short ribs) until is has absorbed all it’s juices. Let it cool and add a cup of it to the vegetarian mixture above.
TEMPURA BATTER:
1 cup corn starch
1 cup all purpose flour
salt + pepper
1 1/2 cup soda water
1 T curry powder (optional)
mix dries together, then add in soda water and fold together with a rubber spatula until fully incorporated.
